MRHE students this week were able to taste-test Maple Roasted Beets and Carrots. This recipe features beets, making them not only delicious, but also nutritious. Beets are a great source of fiber and antioxidants. Fiber promotes a healthy digestive system and prevents overeating by keeping us feeling full longer. Beets are also full of Vitamin C, which is an antioxidant. Antioxidants prevent cell damage and can help to prevent cancer and heart disease. Additionally, eating beets has been associated with lowered blood
pressure. Beets can be enjoyed raw, cooked, or pickled. Linked here is the recipe the students sampled, so you can try out this sweet recipe at home!
The taste-test project was coordinated by MRH Food Services dietetic intern Emilie Bauer (pictured in apron) through Illinois State University. Also picture are lucky testers Caitlyn Rodriguez and Antwain Edwards.
